After weeks filled with with sunshine, beaches, and lots of floating, it's time to bid farewell to Mexico and return to the wintry embrace of NYC. This also means the end of our indulgent spree— days filled with margaritas, room service, and all-inclusive buffets —and figuring out how to feed ourselves again.

To ease with this transition, I decided to create a list recipes that would be ideal for meal-prepping. During my staycation tomorrow, I plan to cook these dishes so that we have ample food available as we resume our work routines.
